Because it’s a cold noodle dish, the noodles can be long—ask for scissors and cut them into 2–3 shorter lengths. With Pyeongyang-naengmyeon (평양냉면), don’t add vinegar and mustard all at once; add a little at a time and adjust the seasoning.
