Maeuntang is a spicy fish stew made with freshwater fish such as mandarin fish (sogari) or catfish in a gochujang-based broth. It keeps simmering at the table; freshwater fish have many small bones, so move pieces to your own plate and remove the bones before eating. You can add hand-torn noodles (sujebi) or ramen noodles, or enjoy the remaining broth with rice. Fish, soy sauce, gochujang, and wheat may be used, so tell the staff about any allergies in advance.
