Wheat turns up in places that are not visible on the plate. Most Korean soy sauce contains wheat, and many gochujang products do as well, which makes any sauced dish hard to judge by appearance.
Batter, dumpling wrappers, noodles, and fish cake are unambiguous wheat products, as are jeon and buchimgae pancakes.
Cross-contact matters too. Shared fryer oil and shared utensils are common, so a dish with no wheat in the recipe can still pick it up in the kitchen.
Start by asking whether soy sauce or gochujang is used. Those two questions surface most of the risk.
The phrase that communicates best is "밀가루 알레르기가 있어요" (mil-garu allereugi-ga isseoyo — "I have a wheat flour allergy"). The English word "gluten" is not always understood.
Rice-based dishes are the safer default, with one common exception: tteokbokki sauce frequently contains wheat flour even though the rice cakes themselves do not.
